Gear for a day-before cook
Use shallow containers for smaller cooked portions, check the refrigerator, and choose a pan for tomorrow’s covered reheat. A hot-holding cooler serves a different job.

Make room before you light the smoker
For overnight storage, cut fully cooked meat into smaller portions and refrigerate promptly in shallow containers, within 2 hours or 1 hour above 90°F. Keep the refrigerator at 40°F or below. Leave room around the containers rather than filling one deep tub with a whole roast.
Reheat meat or poultry portions to at least 165°F, checked in several places with a food thermometer. For an oven reheat, set it no lower than 325°F. Use the linked cooking guides for the full method. An appliance dial measures the refrigerator air, not the center of the meat.
Already cooked and serving today? Use the monitored hot-holding setup instead. Reheating later does not repair unsafe storage.
Storage, temperature checks, and the reheat pan
Researched recommendations from manufacturer specifications and care instructions, not hands-on tests. If your existing dishes fit the job, use them.

AVOIDThe microwave. Hand-wash the aluminum, and choose another pan for acidic sauces that can react with it. No rack is included.
